Chili Lime Shrimp

Chili and lime shrimp


Ingredients:
1 pound shrimp
2 cloves garlic, crushed (more if you like garlic as much as i do)
Juice and zest of 2 limes
Juice of 1 lemon
2 (or more!) red chilies, seeds removed and finely chopped (if you are afraid of heat, then try 1 mild red chili). If you like heat, keep the membrane
2 Tbs. olive oil
2 Tbs. honey


Directions:
In a bowl, mix together all ingredients except the shrimp.
Add the shrimp to the bowl, cover and leave to marinate in the fridge for 30 minutes.

Put the shrimp in a frying pan with a little of the marinade and cook over a medium-high heat for 10 minutes. Drizzle more marinade over the shrimp as the existing sauce evaporates and caramelizes until all the marinade is in the pan. Remove the shrimp when they are cooked and set aside. Turn the heat up on the marinade until it boils. Reduce and let the marinade thicken. Spoon over shrimp and enjoy!
