Nutty Bars

Nutty Bars

This is a great alternative to crappy grain ridden granola bars! They are small and easy to take along! I adapted this from Civilized Caveman and GOODNESS they addicting. There are an endless amount of possibilities with these so feel free to play around and come up with your own creations. Servings: 10 Bars (depends on the pan you use)
Prep Time: 10 Minutes
Cook Time: 20-25 Minutes

Tools you may Need:
Food Processor
Pyrex Baking Dish (9x9 or 9x12)
Mixing Bowls

Ingredients:

1 Cup Raw Almonds
½  Cup Roasted Salted Almonds
¼  Cup Raw Pepitas
¼  Cup Raw Sunflower Seeds
¼  Shredded Unsweetened Coconut
¼ Cup Unsweetened Coconut Flakes
½ Cup Dried Cranberries
½  Cup Melted Coconut Oil
¼  Cup Raw Organic Honey
2 Eggs
3 Tbsp. Cinnamon
¼ Cup Dark Chocolate Chips (Optional)


Process:
Preheat the oven to 400 Degrees F

Place the almonds in the food processor and continue to pulse until you have tiny chunks – not the consistency of flour, keep it rough.

Transfer the mixture to a mixing bowl and add all of the remaining ingredients. Mix well to ensure an even distribution of ingredients

Grease the baking dish with coconut oil and then transfer the nut mixture to the dish

Bake for 20-25 minutes or until the center of your bars pass the toothpick test

Once done, remove from the oven and let cool on the counter in the pan

Once you can handle the pan without oven mitts, place the bars in the refrigerator and let cool completely  - This is where I melted down some of the 70% Dark Chocolate and drizzled my bars...

Remove from the fridge and then slice into bars of the size of your choice
