Faux-coccia Bread

I really don't need to say much more... thanks to FitRichWoman (Malika) for the original version of this recipe. I only made a few changes... enjoy this with olive oil, balsamic vinegar, and fresh cracked pepper... Or as the outer pieces of a yummy sandwich.... or as pizza crust... the list goes on and on!!

Faux Coccia Bread

3 C tapioca
1 C coconut flour
½ c flax meal (I use golden)
½ tsp. oregano
½ tsp. granulated garlic
½ tsp. rosemary
1 tsp. salt
1/2 tsp. baking soda
1 tsp. cream of tartar
1 ½  C water
1/3 C olive oil
2 eggs beaten
½ c yogurt

Directions
Preheat oven to 400 degrees
Sift dry ingredients in a medium sized bowl.
Bring water to a boil in a small pot.
Measure 1 and ¼ C water with your measuring cup and pour into flour mixture and mix well with a spoon.
Allow to cool then whisk in the remaining wet ingredients
Form two balls. Place between two pieces of parchment paper then place to roll to desired thickness.
Bake for 15-20 mins or until brown

  1. Do you have a suggestion on where I can buy tapioca and flax?
    Also, are they powders?

  11. Made this last night. LOVE it! My husband and I have been gluten-free a lot longer than we've been grain-free, and this counts among some of the best gluten-free bread we've had. And we've had a lot!

However, we'd really prefer not to be eating flax. Do you have a suggestion for something we could sub in for the flax meal? Thanks!

P.S. I've also made your meatza balls and gyros/tzaziki. Both were AMAZING! Your blog is my new favorite paleo recipe site. :)
