Smoky Chipotle Salmon

I wanted smoked salmon without the work so I conjured this recipe up. Its super simple and the flavors are so yummy! Makes for an easy elegant meal that I would serve to guests. I served this with garlic-butter spaghetti squash (tossed with garlic, olive oil salt and parsley) and baby kale & spinach. The kids cleaned their plates!!




Smoky Chipotle Salmon


Ingredients
4 salmon fillets (about 1 1/2 lbs)
2 Tbsp water
1/4 c olive oil
1 tsp Wright's Natural Liquid Smoke - Hickory 
1 tsp dry mustard
2 tsp sea salt
1/2 tsp ground chipotle pepper


Directions
Pre heat broiler on High setting. 
Rinse, pat fish dry and set aside. 
Wisk all ingredients, except salmon, together in a bowl. 
Add salmon to bowl tossing to coat. 
Place fillets on aluminum foil lined cookie sheet. 
Broil on high  for 7-10 minutes or until fish flakes easily and is nearly opaque throughout.
