Apple Cinnamon N'oatmeal

I have a few newly Paleo peeps who really really missed their oatmeal. I tried a few creamed cereal recipes but didn't really care for the texture. I came up with this alternative. It reheats really well. This makes 6-8 servings. This picture really doesn't do it any justice as it tastes so much better than this picture looks! We tossed in a handful of dried cranberries. You could also use any nut flour you want -- i just happen to be allergic to all of the rest of them! Hope you enjoy it as much as we did!







N’oatmeal
1 c finely chopped dates
2 apples peeled and diced
1 Tbsp butter
1 Tbsp cinnamon
1 Tbsp molasses
1 Tbsp maple syrup
½ tsp salt
2/3 c slivered almonds
1 ½ c almond milk (Almond Breeze plain)
1 14oz can coconut milk
1 C Almond flour
½ c flax meal

Over medium heat, melt butter in a pot then add apples, dates, cinnamon, molasses, maple syrup and salt. Cook until apples are tender – about 5 minutes.  Add almond milk, coconut milk and slivered almonds. Stir in almond flour and flax meal.
