Happy 4th!

What better way to celebrate the birth of our great nation than with ice cream?? With Paleo ice cream of course!!


This yummy goodness is made with coconut milk, eggs, honey, almonds and organic dark chocolate (72%)... Want the recipe? Well want no more...


Base

  • 1 can coconut milk, full-fat;
  • 4 egg yolks
  • Seeds from 2 fresh vanilla beans or 4 tbsp real vanilla extract
  • 3 tbsp raw honey
Mix-ins
  • 1/4 C chopped almonds
  • 1/4 C chopped dark chocolate
  •  1/2 cup of your favorite berries (chopped or blended to a puree)
  • 1/2 cup coconut flakes
  • 1/4 cup finely chopped mint
  • 1/4 cup chopped nuts
  • Lemon, lime or orange zest
  • 1/4 cup dark chocolate chips or flakes (you can take a high quality dark chocolate and chop it yourself to your liking - this is what i did).

1.    Add honey to egg yolks and beat until thick and fluffy.
2.    Pour the coconut milk into a saucepan and bring slowly up to boiling point but do NOT boil.
3.    Pour the hot coconut milk into the egg yolks and honey mix whilst continuously stirring. Then pour the mixture back into the pan and heat gently, stirring until the custard thickens - DO NOT BRING TO THE BOIL OR IT WILL CURDLE.
4.    When you can see a film form over the back of your spoon it's time to remove the saucepan from the heat. Leave to cool.
Then you can  either:

a) Pour the cooled custard into a bowl and add your chosen flavoring and mix ins, then transfer mixture to an ice cream maker – this is what I did and 20 minutes later, I had cold, yummy, deliciousness!

b) Pour the cooled custard into a bowl and add your chosen flavoring and mix ins, then transfer mixture to an ice cream maker.
