Margarita Shrimp and Scallops

How about something that reminds me of warm sunny days on the beach sipping something cool... Hubby actually gets the credit for this delishiousness but he doesn't have a blog so i get to swipe it (swiper no swiping! - that was for all the parents of toddlers out there)


Anyway -- hope you enjoy this as much as i did!





Ingredients
  • 1 pound wild caught shrimp 
  • 1 pound large sea scallops
  • 1 Tablespoon grass fed butter

Marinade 
  • 4 limes, juiced
  • 2 Tablespoons extra-virgin olive oil
  • 4 Tablespoons gold tequilla
  • 2 Tablespoon orange flavored liqueur
  • 2 Tablespoons finely chopped cilantro leaves
  • Pinch salt and freshly ground black pepper
Combine everything in bowl. Add shrimp and scallops. Let marinate for 1 hour but no more than 3 hours. 
While seafood is marinating, make salsa (which also goes very well with just about anything!

When ready to cook, add butter to pan and cook shrimp until pink and scallops until firm and opaque (about 2-3 minutes per side) 
Remove from pan and top with salsa just before serving!

Salsa
  • 1 medium mango, peeled and flesh diced
  • 1 tomato diced
  • 1 scallions, green part only, diced
  • 1 jalapeno, seeded and diced
  • 1 Tablespoon freshly chopped cilantro leaves
  • 1 Tablespoon diced Vidalia onion
  • 10 mint leaves, chopped
  • 2 limes, juiced
  • 2 Tablespoons extra-virgin olive oil
  • Pinch salt and freshly ground black pepper
