Citrus Spinach Salad

I had a variation of this salad at a little inn in Santa Maria while at a couple's retreat. I really liked it but thought it was missing something. I created a dressing for it and added strawberries and perfection was reached! This salad is lovely in that its refreshing, easy and has a good dose of happy-fat -- you know the kind of fat that makes you happy not SAD (pun intended)
Anyway, hope you like it!






Spinach Salad
5 cups Baby spinach
2 avocado sliced
2 oranges peeled, sectioned, and sliced
1 red grapefruit, peeled, sectioned and sliced (i also cut off all of the gross pith)
1/2 cup sliced strawberries


Dressing
1/2 c olive oil (i use Kasadrinos because i can't live without it)
2 Tbsp balsamic vinegar
2 Tbsp orange juice
Juice of 1/2 lime
1 tsp salt
1/2 tsp pepper

Do you mean Santa Maria, CA ? I've been there! Was it the historic Sant Maria Inn that you went to? I had lunch with a friend there one time.

WOW, cool! I love the Santa Ynez Valley, Solvang, and Los Olivos. Have you been to any of those nearby places? Also, the Avila Barn in Avila Beach, which is about half an hour from Santa Maria. If you haven't been to any of those places, put them on your places to visit list. If you go to Solvang, I can recommend a restaurant for you to go to. It's not paleo, but I'm sure you could easily work around that. The cook is very accomidating and they take great care of their customers.

I should clarify, Avila Barn is north of Santa Maria.
