Double Chocolate Chip Cookies
Ingredients
¼ c chopped dates
2 Tbsp water
4 pastured eggs
¼ C raw honey
1 tsp vanilla
½ C pastured butter, melted
1 C coconut flour, sifted
¼ C unsweetened cocoa powder
¼ tsp sea salt
¾ C dark chocolate chips
Directions
Preheat oven to 325
Pulse water and dates in a food processor until jelly-like,
scraping down sides as necessary
Wisk eggs, honey, vanilla, and butter together
Add in cocoa powder and coconut flour
Using a spatula, mix in chocolate chips
Scoop out dough into heaping tablespoons then shape into
cookies
Bake for 15 minutes
