Its Candytober... now let's make it Paleo

I hunted and searched and finally found (can't remember where since i looked at a thousand sites) a yummy recipe for paleo friendly candy. Now of course you wouldn't nosh on these all day but for a treat, these are FAB. Its a great replacement for peanut butter cups and the folks on the plantation  at work ate the whole dozen that I brought -- mind you there are only 5 peeps in my department... without further ado... I present to you, Paleo Bon Bons





1 C dates
1/2 C almond butter
1/2 C sunflower butter
1/3 C coconut oil
2 Tbsp creamed honey
2 Tbsp almond flour
1 10 oz package semi-sweet chocolate

In your food processor, puree the dates into a paste
Add almond butter, sunflower butter, coconut oil, almond flour and honey and pulse until smooth
Add mixture to sauce pan and cook over medium-low heat until it just starts to bubble
Place in fridge for 30 minutes until it is about room
Form into balls
Chill in fridge until very stiff- a few hours to overnight
Melt chocolate in double boiler or microwave in a glass bowl for 10 seconds at a time stirring between sessions
Coat each ball in chocolate and set on wax paper and chill in the refrigerator to harden chocolate
