So i was wandering along in Paleo-land one day and heard a little birdie say "You know you can make that mayo a lot easier with a stick blender". Ok so I used my imagination a bit but i DID get this idea from someone somewhere in the Paleosphere....
Put all my lovely ingredients in the jar then blend it right there in the jar.. Sounded a bit odd that it could be so easy but I measured and added all the while hoping and praying that this would work... I put the stick blender in the jar, turned it on high and *POOF* (more like wwwwhHHHIIIRRRRR but who's asking) I had mayo!!!! It was thicker than the original, took all of 1 minute to whip up into thick deliciousness and there was no scraping/transferring/painfully sloooooowww oil drizzling! WOO HOO!!!
Use THIS recipe with a Stick Blender and get mayo in under 2 minutes!

Chipotle Mayo
1 egg
EVOO
1 chipotle chili (in adobe sauce)
2 table spoons adobe sauce
1/2 lime
SO cool! I'll have to try that with some sweet potato fries! Sounds DELISH!
