I have been wanting to recreate them since that day so I came home and got busy. It took 4 or 5 tries but I think i nailed it. I also used them to make BALTs (Bacon, Avocado, Lettuce, Tomato) wraps. I used Paleo mayo, dijon mustard, avocado, turkey and ham too... Without further ado, I present to you....
Tortillas (makes approx.
4 4-inch tortillas)
½ C tapioca flour
2 Tbsp coconut flour
1/8 tsp baking soda
¼ tsp cream of tartar
1 1/2 Tbsp lard
¼ tsp salt
4 Tbsp boiling water
Sift all dry ingredients.
Add lard to dry ingredients mixing to form crumbles
Add hot water into dry ingredients mixing until dough-like (don't be afraid to use your hands!)
Form 2 inch balls, place between two sheets of parchment paper and press into flat discs
Place in ungreased skillet until top begins to dry around
the edges – the underside will be slightly brown
Remove and let cool before enjoying as they will become
more pliable as they cool.

ooh this looks good! I really want to try it..do they taste closer to flour or corn tortillas?
They are reallly close to flour tortillas -- haven't quite mastered the corn texture yet... :)
I made these this weekend - YUM!! I think it would be dangerous to eat them too often, but what an awesome 'bready' treat now and then. And my husband LOVED them, which is always a plus. Thanks!!
Really trying to make these... HOW to roll out? How big? These are sticking to everything. Do I only "bake" on one side? Don't I turn it over? Really hoping this passes my husbands taste test!! Help!!!
They make about 4 4-in tortillas. I roll them out between parchment or wax paper. I roll them pretty thin - like a tortilla. I don't roll them but fry them in a pan with no oil - both sides.

These were wonderful!! Not a large wrap, but very tasty. Cooked they hold together great... but very delicate to work with... can't be impatient or rush!!
Woo hoo! Glad you liked them! I tried something new last night -- doubled the recipe, let the hot water sit about 30 seconds before working then worked with them while they were still warm. This made it easier to work with. I rolled them out on parchment paper into a big square and baked them for 5 minutes - VOILA! A big sandwich wrap!

have you ever made these in bulk and then stored them? just a ziplock on the counter? or fridge? or freeze??
I make these in bulk and have frozen and refrigerated them. They thaw nicely on the counter :)
I stumbled across this recipe for tortillas and I'm dying to try it. However I was wondering if the coconut flour is necessary or if I could just add an additional bit of tapioca. Also if they would turn our right if I used butter/coconut oil for the lard?

I think I did something wrong, mine had the right flavor but were like crackers. Do you think I cooked them too long? How long did you cook each side?
My tortillas turned out amazing! Growing up in a Mexican food style household paleo has been hard for me without tortillas, thanks for sharing your yummy recipe. My four year old ate it and my picky non-paleo wife too :)
