Meatza Balls

I've been SUPER busy for the past week but I feel the need to make amends for being awol -- I'm offering up this delicious recipe for meatza balls. I made these for a fund raiser this weekend and they went over SMASHINGLY! They are yummy little treats stuffed with mozzarella and covered with a simple marinara sauce... At least three people asked me for the recipe so here it is! I present to some and reintroduce to others, Meatza Balls!






Meatza Balls
1/4 lb pepperoni
1 lb grass-fed beef
2 lbs italian sausage
1 Tbsp italian seasoning
1 tsp salt
1/2 tsp pepper
1/4 C shredded parmesean
20-30 mozzarella sticks, cut up into 1 inch pieces
1 jar organic marinara sauce


Directions
Mix all ingredients except mozzarella sticks and marinara sauce in food processor until well combined. 
Place about 2 tablespoons in your palm, flattening into a disk
Place mozzarella piece in center then form ball making sure to seal all edges
Arrange in 8x13 baking dish
Bake at 350 for 20 mins then cover with marinara sauce and bake for 10 minutes more
Serve hot!

Will make these on the weekend for a weeknight meal and serve over mixed greens. Looks yum!

Could these be frozen either before or after cooking??

These can be frozen either way. I would flash freeze them raw - place them on a cookie sheet then freeze.
