Chicken n' Waffles the Paleo way!

Let me start by saying if you have never had this combination, do yourself a favor and have it. STAT.

Now that I got the formalities out of the way, let's get down to business! The business of chicken and waffles that is!

Step 1: Season and fry chicken wings in coconut oil / avocado oil / lard.

Step 2: While chicken is cookin, start makin paleo waffles.

Here's the how-to.

Paleo Waffles

4 Large Eggs
4 T. Coconut Oil
2 T. Organic Maple Syrup
2 T. Vanilla Extract
1/2 C. Water
3 C. Blanched Almond Flour
1 tsp. Sea Salt
1 tsp. Baking Soda
1 tsp. Cinnamon
2 T. Arrowroot Powder
2 Fuji Apples, grated

In a medium bowl, whisk together eggs, maple syrup, coconut oil vanilla, and water, until smooth.
In a separate bowl, combine the almond flour, salt, baking soda, arrowroot powder, and cinnamon.
Add almond flour mixture to egg mixture. Combine thoroughly
Add apple and mix to combine.
Spoon into heated  waffle iron. Cook until golden brown (about 3-4 minutes).
Serve with 1 T. warm organic maple syrup and pasture butter! Mmmmm!!!

Makes 4 waffles in my Oster round waffle maker

Does the arrowroot do anything special? I'm wondering if I can omit it or add a different kind of flour in it's place? What do you think?

It acts as a binder but i have made these before and forgotten it (oops)! The texture was a little different but they were still tasty. you could sub tapioca starch if you had it...
